An easy to prepare meal, these keto egg bites are perfect for making at the beginning of the week. Yielding five, two piece servings, it’s good for every weekday when you just need to get up and go. You can heat these up in the microwave, or when you’re really in a rush, eat them straight out of the fridge. There really isn’t a lot to say about these egg bites to be honest. They’re super simple to make, low-carb, and taste great.

By the way, you’ll see I use smoked Gouda in this recipe. You could really use whatever cheese you prefer, but I promise you that grating or slicing up some Gouda is completely worth it.

Ingredients

  • Canola oil (or other cooking spray)
  • 1 cup Mushrooms sliced
  • 4 stalks Green onions sliced
  • 10 Eggs
  • 10 slices Canadian bacon
  • 3 oz Smoked Gouda shredded
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F. Spray the muffin tin with canola oil to prevent the egg bites from sticking. 

  2. Slice the 1 cup of mushrooms and 4 stalks of green onions. Even if you bought the mushrooms "sliced" go ahead and cut them up into something close to 3x1 centimeter slices. 

  3. Evenly divide the onions and mushrooms into 10 cups in the muffin pan. 

  4. Crack one egg into each of the ten cups. Use a fork to break the yolk and lightly mix the egg, mushrooms, and onion together. 

  5. Cut the Canadian bacon into smaller pieces, and place one slice worth in each cup. 

  6. Shred the 3oz smoked Gouda with a cheese grater, then evenly distribute it between the cups.

  7. Bake at 350° F for 20 minutes.

  8. Each serving is two "bites".
