Keto Sausage Balls – Breakfast Meal Prep

One of my favorite breakfast bites has to be sausage balls. Pairing these with something like our second most popular recipe, the keto breakfast egg bites will make for a flavorful breakfast that will surely fill you up. Egg bites, sausage balls, and black coffee. I can’t think of a better way to start my day.

Sausage Balls

I’m honestly not sure where it was that this original recipe had come from. It was either the back of a box of Bisquik or Jimmy Dean sausage. However, we won’t be using pancake mix for these sausage balls. Instead we’ll be swapping that out for a combination of almond flour and eggs to give that classic texture. The mixture will also help them stay together better during cooking.

This is an incredibly easy recipe to make and the pay off is well worth it. If you’re following the recipe as described below, you should end up with somewhere around 65 sausage balls. The great thing about this recipe is that they reheat really well, so they’re great for meal prep all week. If you don’t feel like you need the whole batch, you can freeze the uncooked sausage balls and cook them as you need them.

Optional Ingredients

For this recipe, you could add finely chopped celery as well. You can also season them however you want them. Personally, I think they’re good as is, but if you wanted to add some heat, red pepper would make a great addition. Finely chopped jalapenos would also be a great addition for some kick. The options to experiment with are endless.

Ingredients

  • 32 oz Sausage uncooked
  • 16 oz Sharp cheddar cheese shredded
  • 1 cup Almond Flour
  • 1 Egg beaten
  • 1/2 cup Onion finely chopped
  • 1/2 tsp Garlic powder

Instructions

  1. Preheat oven to 375.

  2. Combine all ingredients in a mixing bowl.

  3. Form into 1" balls.

  4. Bake 15-18 minutes on an ungreased cookie sheet until golden brown.

Recipe Notes

These end up being relatively greasier than the original recipe since there isn’t something like biscuit mix to soak it up. If you want a crispier sausage ball, bake them on an oven safe baking rack over the pan for 18 minutes. This prevents the sausage balls from cooking in the grease itself.
