A perfect side dish for steak and meats. Consistency of mashed potatoes with all the toppings of a full loaded baked potato.
Remove leaves and chop the cauliflower into medium sized pieces. Steam cauliflower 15-20 minutes until soft. If you want a creamier mashed potato consistency, use a food processor and process until the desired texture.
Chop bacon and fry until done, approx. 8 minutes.
Add steamed cauliflower to mixing bowl, mash with a fork or potato masher until desired consistency. Add cooked bacon, shredded cheese, chopped green onions, butter, and sour cream to mixing bowl. Fold together and mix well. Optional: serve with sour cream and green onions.
