Like many other keto recipes you’ll find, it’s actually cauliflower that makes up these low-carb mashed potatoes. This easy, meal prep-able side dish is the perfect compliment to a variety of grilled meats.

“Boil ’em, mash ’em, stick ’em in a stew. PO – TA – TOES.” Luckily for us, cauliflower works much of the same way. It’s one of the most versatile vegetables for the keto diet.

Yes, it’s cauliflower again

Cauliflower continues to reign as the supreme keto ingredient in my mind. Simply because it will taste exactly like whatever you add to it, while still having a very easily changed texture. It seems like cauliflower is the vodka of the vegetable world in that it’s going to taste like whatever you mix with it. For this recipe we’ll get it as mashed as possible and it will quickly become the perfect substitute for mashed potatoes. If you’re like me and liked your baked potatoes fully loaded, this will definitely hit the spot. This makes the best comfort food side dish when paired with a nice steak or other grilled meats.

Using in meal prep

With this being easily made in large batches, it’s a perfect side for meal prepping your keto eats for the week. This is my go-to side dish for steaks, but it works great with chicken, pork, and salmon. In the pictures on this article, you’ll see part of our 8 lbs of turkey grilled up at the beginning of the week. If you’re cooking for yourself, something like that would make about six great keto meals throughout the week.

Keto Cauliflower Mashed “Potatoes”

A perfect side dish for steak and meats. Consistency of mashed potatoes with all the toppings of a full loaded baked potato.

Ingredients

  • 2 heads Cauliflower
  • 6 slices Bacon chopped
  • 1 cup Sharp cheddar cheese shredded
  • 3 stalks Green onion chopped
  • 3 tbsp Butter
  • Salt and pepper to taste
  • 1 tbsp Sour cream optional

Instructions

  1. Remove leaves and chop the cauliflower into medium sized pieces. Steam cauliflower 15-20 minutes until soft. If you want a creamier mashed potato consistency, use a food processor and process until the desired texture.

  2. Chop bacon and fry until done, approx. 8 minutes.

  3. Add steamed cauliflower to mixing bowl, mash with a fork or potato masher until desired consistency. Add cooked bacon, shredded cheese, chopped green onions, butter, and sour cream to mixing bowl. Fold together and mix well. Optional: serve with sour cream and green onions.
