Keto Country-Style Smothered Chicken

A simple recipe that I fell in love with growing up, it makes for an easy keto dinner once you swap out a few ingredients. Eating it over a bed of riced cauliflower instead of white rice is an easy swap and it still goes great with the smothered chicken.

This was/is my mom’s recipe and I have no idea where it originally came from, but it used to be one of my absolute favorite meals growing up. Once I made the switch to keto, I knew I had to see if I could make it low-carb enough to work. Surprisingly it was a pretty simple switch once you do away with the rice. The dish is incredibly easy, but full of flavor. Hopefully you’ll enjoy it as much as I did growing up.

For the record, this is not a good meal for someone on a medical ketogenic diet due to the high protein content compared to the fat. Cooking the chicken in the bacon fat and mixing a lot of that into the soup will give this a higher fat content than what’s show in the nutrition facts on the bottom of the page, but that’s difficult to calculate and get an accurate number on. This recipe definitely falls under the “soul food” category as compared to “the best thing to eat on a keto diet”.

The “Rice”

Cauliflower rice is my personal favorite rice substitute. You can buy this in steamable microwave safe bags, or you can make it yourself. If you want to make it yourself, you’ll need a food processor. All you need to do is cut the cauliflower florets off of the stalk, put in the food processor and turn it on. Just make sure you don’t overdo it and end up with a cauliflower puree. An alternate method with a food processor is by putting on the shredding blade and feeding the florets through the opening in the top. After this, you should steam it for just 3-5 minutes to give it the consistency of rice.

Ingredients

  • 3 slices Bacon Sliced
  • 2 pounds Chicken Cubed
  • 10.5 ounces Cambell's Condensed Cream of Mushroom Soup
  • 2 cloves Garlic Minced
  • 1 teaspoon Dried basil leaves Crushed
  • 1/4 cup White onion Diced
  • 3 cups Riced cauliflower Steamed
  • Fresh basil for garnish (Optional)

Instructions

  1. In a 10 inch skillet over medium heat, cook sliced bacon until crisp. Transfer to paper towels to drain, keeping the grease in the pan.

  2. Cook chicken in bacon drippings for 10 minutes or until browned on all sides. 

  3. Spoon off some of the fat, then add cream of mushroom, garlic, and basil; stir until smooth. Heat until the cream is boiling, then reduce heat to low. Cover and cook for 20 minutes.

  4. Add onion. Cover and cook 8-10 minutes more or until the chicken is no longer pink, stirring occasionally. (If you're using frozen riced cauliflower, this is the perfect time to get it heated up in the microwave or skillet.)

  5. Serve over riced cauliflower, top with bacon, and garnish with fresh basil if desired.
